Ambodivoara vanillas are prepared on site, guaranteeing their freshness; they are selected by farmers who pass on their knowledge and skills from father to son.
This involves pod selection, rejection of pitted or unripe pods, hand-sorting into several distinct qualities: from black, moist, unsplit pods sold for their “gourmet” quality, to red pods for extraction.
Their characteristic high and constant vanillin content gives them a sweet, fragrant flavor and facilitates their preservation. Similarly, slow processing and daily control of drying in the sun or indoors protect their fragrance and ensure long-lasting preservation.
Bourbon vanillas are prized by the industry not only for their sweet, rich fragrance, but also as a natural flavor enhancer: a strawberry ice cream enhanced with vanilla will see the strawberry flavors intensify in the ice cream.
This quality is further guaranteed by the presence of a hallmark specific to each producer/preparer, who signs each pod of his preparation with his signature.
